You don't actually need any monsters for a good game. Just create a suspense and make sure that player will want to escape from the unknown. You can simply darken the screen, increase heart beat when the "monster" comes near. It will even make it more surreal and increase immersion. I will definitely find myself immersed in a game running from an unknown enemy rather than hacking goblins.
My problem is with 3D, I have no experience in it. If some one takes on the 3D part of the game then I might do the mechanics. I have very little time thus completing this project in 3D without help is impossible.
I might have given it a shot, but I do not have any plans for any 3D games. The best thing I liked about is no combat. I wanted to do something like that for years. Some dark scary dungeon, to solve puzzles and hide from enemies (not just a big puzzle). Something like a commoner, who finds himself in a dungeon and tries to escape from it.
May I make some requests? Another type of fruit will allow harder game play, another powerup, something like canned lightning. Also some blockers, ice (temporary) and stone (permanent). And may be a cursor that can work with the overall theme?
I don't want be offensive or seem like trolling, but just to make sure no one gets a bad impression, Might and magic is all about story. I still remember the names of important characters and places and all the details of the stories from MM 6 (1998) & 7 (2000) and heroes 3. Cant say the same for the newer installations, I quit after 8 failed to deliver.
I think there are a lot more 3D foss games than you have listed. I have played 0ad, ufo, open arena. Learning 3D game development is not easy. A simple shooter will require ray casting, 3D collision along with skeleton based animations and path finding. A 2D game with 3D graphics will not be too hard but I guess not many has the motivation to do it. 3D assets for 3D games are also hard to came by. They vary wildly in style and most of them requires additional work.
But if you are asking about 3D or 2D assets, I would say 3D would be a lot easier for many reasons. It is possible to render a 3D asset for any purpose, side scrolling, top-down, isometric, large / small, cartoon or realistic rendering. Also, its easier to create new poses or animations. If you are planning on investing time to create assets, I guess it will be much more useful if its in 3D.

Does it have to be 3D?
Nice set, waiting for your website patiently.

There are lots of chess resources, but if you need high resolution you may render these:

If you want I too can render them for you, just specify the size and perspective.
Recreate something similar? After all, neither facial expressions nor art style can be copyrighted.
